Essential fats have myriads of uses, of which I will only talk about one - the most important one, simply because it affects EVERY other reaction.

Our cells and the organelles within our cells all have a surrounding, which is called a membrane. This membrane is composed chiefly of fats. Our bodies know how to combine the essential fats and the saturated fats, in order to get the best structure. The saturated fats are straight, can be stacked like perfect boxes, and thus can be made to be hard, and impermeable. The essential fats are crooked, hard to stack, and are liquid at room temperatures.

Just like the 3 bears, there is a happy medium between a bed that is too soft, one that is too hard, and one that is just right. Most of us do not have enough of the essential, pliable fats, so our membranes consist of too much saturated fat, making them less penetrable. Definition - chemicals have a hard time passing through - both the nutrients arriving at the membrane, and the waste that is created by the body, and attempting to pass outside of the membrane. So this affects hair, as well as every thing else, since metabolism is defined as all the chemical reactions that occur within the cell - miniature factories themselves.
