Not only are the addresses not shown in the headers of most spam, but, if you DID get all the addresses from them, it would be spam just the same. You would be risking legal trouble just like the original spammers. Probably more. There have been more and more court cases against spammers and the people are winning.
Bottom line is that it's your choice. My couple pesos.
